A Louisiana family bakery, baking Carnival into every braid.

NOLA Brand King Cakes was born in a small French Quarter kitchen with one mission — keep the New Orleans king cake tradition exactly as our grandparents knew it. Hand-braided, slow-proofed, finished with the royal sugars of purple, green, and gold.

The recipe

Every cake starts with a long, slow brioche ferment — overnight in cool Louisiana air — so the dough develops the tender, pull-apart crumb a king cake is supposed to have.

We braid each cake by hand in the morning, fill it with traditional cinnamon, Creole cream cheese, and finish it with a thin vanilla glaze and the Mardi Gras sugars whose colors carry the meaning of Carnival itself.

The tradition

Purple for justice. Green for faith. Gold for power. The three royal colors of Mardi Gras are sifted on each cake to honor the Twelfth Night feast that begins the Carnival season every January 6th.

Inside every cake is the traditional baby — a token of luck for whoever finds it in their slice, with the joyful obligation of hosting the next king cake party.
